We could not believe how good this homemade deli turkey was and since Madison isn't eating deli meat while she's pregnant this was the perfect way to satisfy the craving!! The lemony herby aioli and fresh toppings didn't hurt either.

Ingredients

Honey Maple Turkey
  • 2 lb boneless turkey breast, skin on
  • 6-8 cups of water, depending on the size of your pot
  • 2 tbsp maple syrup
  • 1 tbsp honey
  • 1 tbsp whole peppercorns
  • 1 tbsp salt
  • 2 bay leaves
  • Glaze: 1 tbsp honey + 2 tbsp maple syrup + 1/3 cup water
  • Seasonings: garlic powder, paprika, salt, pepper, onion powder
  • Kitchen twine if you have it
Lemony Herby Mayo
  • 1 cup of mayo
  • zest of 1/4 a lemon
  • juice of 1/2 a lemon
  • fresh herbs - we used chives, parsley, basil, and a little tarragon
  • 1/2 clove garlic
  • Salt & Pepper
Sandwich Toppings
  • Sourdough
  • Heirloom tomatoes, sliced
  • Crunchy lettuces
  • Red onion, sliced thin
  • Chives
  • Lemon juice
  • Olive Oil
  • Salt & Pepper

Instructions

Honey Maple Turkey
  1. BRINE: Mix all ingredients listed above the glaze in a pot over low heat, you want enough water to submerge the turkey...let it cool then add turkey 12-24 hours before you plan to cook it
  2. The next day, pat turkey dry and coat generously in seasonings then tie tightly with kitchen twine and let dry in the fridge for 1-2 hours on a wire rack, do not cover!
  3. Turn your oven to 450 degrees and cook turkey skin side up on a wire rack for 20 minutes, lower heat to 300 degrees
  4. Every 30 minutes brush lightly with glaze (measurements listed above) until the internal temp reaches 160 degrees - it will come up to 165 degrees - ours took close to 2 hours
  5. Wrap in plastic wrap and place in the fridge for at least 2 hours before slicing
  6. When you're ready to eat, slice thin against the grain with a sharp knife and enjoy!
Lemony Herby Mayo
  1. Combine an ingredients in a food processor...taste for seasoning and favor preferences (you can always add more garlic, extra herbs, etc. if you prefer it)
Sandwich Time!
  1. TOMATOES: Slice and dress with olive oil, salt, and pepper
  2. LETTUCE: Dress with lemon juice, olive oil, salt, pepper, and chives
  3. Slice your fresh bread or if it's a day old, toast the bread
  4. Slater mayo on both sides of the bread
  5. Place a generous layer of turkey down, tomatoes (with some extra olive oil/juices), red onion, lettuce and that's it!
